After the transformation of must into wine, the barrel has to be always full, to avoid the contact between wine and air, for this reason regular refilling shall be carried out. At the beginnig you have to make 2-3 refilling for week and then decrease them as the spring approcches. Finally, you procced to bottling the old wine and you can taste the new one.
