CURIOSITY
In Winery
The wine of the previous year should have been
already decanted in the final containers and
transferred in the winery, in order to create space
for the new wine.
In this period is possible to bottle the medium
aging wines, that is those that are consumed the second year after the
harvest. It is important do not neglect the wine that ferments in the
vats: it is very important to provide for air exchange, taking care to
avoid the air currents and, after 15 days of fermentation, the first
racking is carried out.
