Harvest: manual, after a careful selection of
the best bunches between the 3rd and 4th
decade of September
Vinification: after pressing, the product is kept
in cryomaceration for 24 hours and then
continues to be macerated for over 100 days
with the aim of extracting the best aromas
and polyphenols.
Fermentation is carried out at temperatures
no higher than 22-24 ° C in order to
maintain the product fresh with elegant aromatic
characteristics to obtain a softer wine. After racking, the
wine is left to rest for about 60 days in steel tanks; the
refinement will take place in French oak barrels of second
passage for 18 months
Colour: bright, ruby color
Bouquet: cherries and forest fruits, on a background of
pepper, cardamom and coffee; delicate traits of dried rose
and violet
Taste: soft and enveloping mouthfeel, rich in juicy freshness.
Slender and vigorous, it slowly fades into flavors of cherry
and spices
Serving temperature: 16-18°C It is advisable to uncork the
bottle at least 1 hour before use
Alcohol content: 13,5%
Recommended pairings: it can accompany second courses of
feathered game, roasts, braised meats, succulent meats and
aged/semi-aged hard cheeses; or more simply a soppressa of
Treviso
Wine storage: in a cool place at 12-14 °C, protected from
