Location: our vineyards in Salgareda (TV) Maturation: in early September Vineyard System: Sylvoz Planting density: 3500/400 grapes/ha Soil: medium density clay soil. Vinification: after collection, the grapes, without suffering lacerations, are gently pressed, so as to obtain the “mosto fiore”. Then, the static cold decantation of the must happens, and the injection of selected yeasts begins the fermentation, at a controlled 18-20°C temperature. Then wine is then transferred and allowed to sharpen. Alcohol content: 11 - 11,50% Description: pleasant flavored dry wine, well-bodied, with almond and hay nuances. Pairings: Excellent with Prosciutto San Daniele, soup of bowline and beans, boil asparagus. Serving temperature: 10-12°C. Storage: in a cool place, at 12-16°C, protected from light. As soon as possible, transfer the damigiana’s content into bottles. Transfer immediately the wine into glass bottle, if you have transported it into plastic containers. Before and after use, clean well the trays.
